Will an organic vapor respirator do me any good while rolling paint indoors? Kind of cold up here in Vermont(0-15 degrees) to open the windows for long.

A respirator will help while you wear it. Any accumulated gasses from the paint, VOC'c, will linger for several hours until ventilated. This usually isn't a problem with low or no VOC paints.

If you are rolling an oil base I recommend trying to ventilate during and after its application. This will be very difficult with such low daytime temperatures.

If the paint smell is a major problem for you use no VOC paint. There are many good paints on the market that have no smell and are manufactured from more natural components.
