Would you recommend using elastomeric paint and/or coating on a drywall ceiling? Someone recommended that I use this type of paint on my Florida room ceiling. I’m not sure because this is a room that has screens and vinyl windows and it tends to get rather humid in there during the summer. Any advice you can give would be much appreciated.

Elastomeric paint is overkill for this area. Plus, it could trap accumulated moisture behind it. I recommend using a very high quality exterior satin instead. At least if there is a problem the regular paint will bubble and split allowing you to notice and get it fixed. The elastomeric will hold itself together longer allowing the problem to do more damage.
