Final finish on hardwood furniture?

Stained maple table with Minwax oil stain. Need hard, durable final varnish, urethane or polyurethane that is flat (no sheen). What do you recommend?

Modern Maters has a dead flat varnish. This is a non yellowing water based varnish. An alternative is Coronado Aqua-Plastic with a dull flat sheen. This is also a water based product, acrylic urethane. Out of these two I like the Aqua-Plastic the best.
