What’s best finish for furniture grade birch plywood? Don’t want it to yellow or blotch.

Either a very good "water clear" lacquer or a acrylic urethane with is water based and easy to use. I like the acrylic urethane by Coronado called Aqua-Plastic, but there are others on the market.
