We managed to have a cooking accident in the kitchen and oil splattered onto our freshly painted walls and ceilings. It has come off the walls but there are marks on the ceiling. I tried in one area to clean and paint started to come off the ceiling. Is there anything that can be done to get the oil off before the paint cures? (fyi latex paint).

Try wiping the affected areas with a little warm water and dish soap on a soft cloth. If cleaning with a wet soft cloth and a little dish soap doesn't work then you will need to spot prime the affected areas with a stain blocking oil base or shellac primer and touch up the primed spots.
