Our fire surround has been painted with too strong a colour and want it to look like a pale pine colour. Can I strip it easily? And should fit be stained- or just polished?

I think your description is in error… I think that you have a Stained & Varnished surface that you don't like…in that case you can use Paint & Varnish Remover and then start over… OR you can Prime it with an Oil Base Sealer Primer and then Paint it (using paint) whatever color you want…
