I painted an eggshell latex over a satin latex finish. Someone told me that I should have gotten rid of the shine. They said eventually it is going to peel right off.

As long as you use good paint there won't be any problems. Remember all paints take time to cure and reach full adhesion to any surface regardless of sheen level. All good latex paints take 2-4 weeks to cure. Be careful not to scratch the newly painted surface during this time.
