I am installing a wood soffit and need a clear finish on the wood. The wood is white cedar and I don’t want it to yellow or turn grey. Any suggestions on what to use to keep the natural color?

There are many clear acrylic or oil base finishes that could work. Keep in mind you want a finish that soaks into the wood and doesn't form a film that could (will!) peel later.
Superdeck 2600 is good.
It is best to finish your soffit before it it is installed, if possible. This would make the application very easy.
